Sam’s nephew is allergic to eggs but loves chocolate, who doesn’t? But trying to find a good brownie recipe that replaces the egg with something else but still gives that glorious fudge texture, can be really difficult. Last year I found a recipe through a vegan website called Northern Veg and tried it, Seth loved it and I thought I could try do it again but experiment with textures, ingredients and more.
The other evening I had an evening of wine, giggles and memories with my friend Emma and not realising I had actually run out of eggs to make a different batch of brownies, I decided to try something a little different, that would still give that delicious chocolatety taste for her kids without them realising it didn’t have half the ingredients my usual brownies had and they were a hit. Bonus!
You only need 6 ingredients and if you’re a baker or a cook, you’ll have most of these ingredients already. No whisks, no endless bowls to wash up. Just one big bowl, one small one, your ingredients and a spatula, a baking tin, some parchment paper and your oven. So simple.
Preparation: 10 minutes
Baking time: 30 minutes (a little longer if you prefer)
- 1 cup of golden caster sugar
- 1/4 cup of vegetable oil (I used sunflower as I had ran out)
- 100g galaxy chocolate
- 4 tbsp chocolate cocoa powder
- 3 cups of plain flour
- 250ml of chocolate milk
- Preheat the oven to 170c and line your baking tin with baking paper.
- In a large bowl, add your sugar and chocolate milk with your oil and mix together.
- Melt your chocolate in the microwave to just soft and add to the mixture, and stir. The mixture will feel quite thick but keep stirring. Add the flour and cocoa powder and mix. It will look quite bitty but will gradually thicken up as time goes. Do this for 10 minutes. Add to your baking tin and cook for 20 minutes, longer if needed, so that when you touch the top of the brownie with your hand, the cake will bounce back up.
- The end brownie will look a little bitty but don’t fear. They have a nice crispy finish.
- Leave to cool, chop into 12 delicious pieces and watch them leave your plate in minutes.
